Tom Manno’s Rule of Cooking Fish: Cooking fish is exactly opposite of cooking beef… fish needs a higher temperature and less time on the grill or in the oven. For every inch of thickness, cook fish for 10 minutes at 425-450 degrees on the grill or in the oven.
