Flax seeds have been cultivated for thousands of years and have skyrocketed in popularity as an added ingredient in a wide variety of foods like crackers, cereals and frozen waffles. A lot of consumers are looking for healthier products these days. Getting a health benefit directly from the food they eat instead of supplements saves time and money. Flax is sought after for the Omega 3 essential fatty acids, lignans and fiber it contains and there is evidence that it may help reduce risk in heart disease, cancer and diabetes. Flax is becoming more popular agriculturally as well. If you buy eggs that are higher in Omega 3’s you are getting the benefits of flax, the chickens that lay the eggs have been fed a diet high in flax!

The flavor of flax is similar to a very light nutty flavor, very close to a mild English walnut, in my opinion. Whole flax seeds are shelf stable, but can go rancid if you grind them up. If you do grind them before use put them in a sealed container in your fridge. Consider adding them to baked goods, as well as dips and salsa. They are also great as a salad topper, breakfast cereal addition or finely ground in a smoothie.
