Baked Sole with Lemon

  1. 1 1/2 pounds sole fillets
  2. 1 teaspoon salt
  3. 1/8 teaspoon pepper
  4. 1/4 cup melted butter
  5. juice of 1 lemon, about 2 1/2 tablespoons
  6. 2 teaspoons finely minced onion
  7. finely chopped fresh parsley
  8. paprika
  1. Cut fish into serving size pieces and arrange in buttered shallow baking dish.
  2. Sprinkle fish with salt and pepper.
  3. In a small bowl, combine melted butter, lemon juice, and minced onion.
  4. Pour over fish.
  5. Sprinkle with paprika and bake at 325 degrees for about 30 minutes.
  6. Garnish with chopped parsley.
